I'm sure some of you out there have replaced your seats with an updated version.  Whats the newest seat I can put in my 75 without having to do a whole lot of modifications

I haven't upgraded my seats other than going to a leather 4" bolster and using Alcantera (man made suede) inserts. My seats in my '81 are very comfortable. 

I've read that the easiest swap would be to use '79-'82 non power seats. You will have to play around with the seat tracks. Either make use of the later tracks or modify and mount your '75 tracks to the later seats. There may need to be some shimming to be done to level out the seats. If you have a welder and some steel stock you should be able to fab up something that is functional and safe. You will probably lose a inch or two in head room.

MANGET1 put C4 or C5 seats in his C3 and they came out nice. Talking to Mid America at Carlisle about this and they were making a direct replacement for a C5 type seat to work. Check them out also.

I bought some 81 or 82 seats and one of the vendors had some covers made in dark brown at no extra charge since that was not a late C3 color. The seats are really comfortable.

I have looked at the seats and am wondering is there a particular year that one should use to get the best fit

I did all mine in the last 2-4 yrs I paid a low of $40.00 to a high of $120.00 for a set of seats. They are out there you just have to be patient & look every day...I used craigslist & found them all within 40 miles. Any year will work just make sure the seat is in fair condition & you can always add more foam to the seat if needed. I reversed my seats so the inside that was never worn is now the outside. You can make your own brackets from directions on Binnie's site but you have to be dead on with the bend on the bracket & drilling & tapping the holes. He doesn't charge that mush & supplies everything including the metric bolts you will need. Mr  Mike supplies a great video & everything fits perfect. I supplied my own material on the 77 as I wanted to keep it a close to original brown (it has brown & yellow seats) as possible  on the others I used his material. I also had a different logo sewn in on each car.

I did put C5 Seats in my C3.  I would not pay $250 for the kit pieces Mid America is selling.  I'm very non-handy and I tapped a couple of holes in the C5 Seats to match them up with an extra set of C3 tracks I bought online.
 
I searched for a long time for my seats on e-bay and found them for less than $500.  After I got them, I even sold the C5 tracks back on e-bay after I removed them!
 
I have heard the Fiero seats do well also - and, they have speakers in the headrests!
 
Either way you go, the task should not be difficult!  Good Luck!!!

I have also heard late model Mustang (I know that is a vulgar word to some Corvette people) seats also fit. I'm sure the tracks would need to be modified.

I used a set of 79 seats in my 74. Made a big improvement in looks and comfort from the stock seats. 
fairly simple swap, only issue was swapping the rear mounting brackets on the tracks, which only amounted to grinding off rivet heads and knocking rivets out and rebolting in holes where rivets were.
